Thai my shoe

Disclaimer:

I haven't made these yet, but they've been sitting in my emails' inbox for a while and thought I should at least put them on here so that one day in the near future I'd be motivated to make them..

Ok, I just want you to make them for me and bring it to me to gobble up! :)  I haven't been in the slightest of moods to make anything this week.

I think it's the weather.  It's too nice to cook.  But really just putting them on here is making my mouth water.  I love me some good Thai food. Not sure that Boise is the best place to get "authentic" Thai, but hey-at least I can make it from home and indulge whilst in my sweats :D  These recipes are perfect for the upcoming summer season.

peeeta! as in greek chicken and veggies pita

ok.  i couldn't resist.

these pita pockets turned out SCRUMPTIOUS!!!!!  and this is the only picture i have since i scarfed it down in 0.3 seconds.

here's what i did.

made the pita pockets from here.  making the dough in the bread maker.  makes everyone's life better by doing so-me thinks.

while the pitas were cooking i cut up two chicken breasts into chunks with approx. 2 tbsp olive oil on med. heat in a large pan. seasoned with salt, pepper, allspice, oregano, parsley, garlic powder, and drizzled some lemon juice over top.  I just eye balled it.  whatever looked good :} i let the chicken sizzle for a bit then covered to retain moisture.  meanwhile i cut up a carrot, stalk of celery, 1/4 of a red and green pepper and dumped them in with the chicken.  i let them simmer without covering for a few minutes, then a few covered as to not make them super soft (i like my veggies crunchy).

after the pockets de pita were cool, i cut them in half, drizzled some homemade ranch in the bottom, as i was out of plain greek yogurt, placed the chicken and veggies next, some spinach, tomatoes, parmesan cheese and avocados on top.

Care for a Savory Bite?

So, as I may have mentioned before-- as you may recall...

I {heart} Pinterest.

Not only does it solve my savage preggers hunger at dinner time, but it also allows me to carouse for dessert.  And really, who doesn't love to carouse?

With little Mr., as with Miss E, I have horrendous heartburn.  Absolutely horrible.   And unfortunately the foods I crave and love the most give me that horrendous heartburn.  {Enter: Zantac 150}

As I was exploring some ideas to console my sweet tooth, I came upon a flourless chocolate cake recipe here.
Intrigued, I made it since usually flour is the culprit of my esophageal  discomfort and it...

Delish.

Rich, but delish.
A few simple ingredients and tastes just like a brownie.  Crispy on the outside and gooey glorious goodness in the center.

Also goes most excellent with ice cream, bananas, and sounds slightly weird-but good with peanut butter--that may just be the pregnancy in me-you be the judge and put whatever fix-ins you want on it.  And relish in every savory bite.

And yes, I've just about eaten the entire pan, but I really don't care because it seems to be acid reflux proof.   Which I find very scrumptious.

Let it snow!

Hurray for white stuff!  It {finally} snowed! 
Although when I got up this morning and saw a light dusting of snow covering the ground and I laughed.  

This, is what the big storm brought?... I thought.
Ooooh no.

I has dumped about 5 inches in mere hours.
 I certainly wasn't fun to drive in this morning for work.  But it is pretty no?
 But we don't have to fret that it will stick around long.  It's already starting to melt.  Which kind of makes me sad.  I love snow days.  We had plenty growing up as kids.  We would wake up extra early just to listen to the radio to see if our county was out for the day.
Jumping off the roof into a huge pile of fluffy snow (Yes,  we would get that much snow). Our dad making us snow caves.  My mom handing us warm cups of hot chocolate to help warm our red noses and cheeks.
Speaking of, I'm going to go grab come of me and Mosey's cookies that we made last night, {they taste just as fantastic the next day...oooh yum!} warm up some hot cocoa, and pop in a movie.
Yup, it's definitely going to be that kind of afternoon.

Cheesy Spaghetti Bake and Chocolate Chip Cookies

The southwestern part of Idaho is expecting a huge snow storm starting this evening.  We haven't received a-n-y snow this winter, which has been pretty unusual for our area.  The snow plows, tire companies, and commuters are gearing up for tomorrow's big dump.   Here's how me and Miss Mosey prepared for tomorrows snowy descent:

We made cookies.
You never know if the power might go out and leave us without an oven when a sudden cookie monster craving hits. 

Sheesh.  Good thing we are prepared!

Nothing is better than homemade cookies right out of the oven.  
Wait there is...
A new cookie recipe cookie right out of the oven that is super ooey gooey, light and fluffy yummy and tops all your other chocolate chip cookie recipes is.  Yup, I found my new and true cooke recipe with a secret ingredient.  See if you can point it out.  Recipe is below.  
 Best-Ever Chocolate Chip Cookies

Ingredients: 
3/4 c. unsalted butter, softened 
3/4 c. brown sugar 
1/4 c. granulated sugar 
1 egg 
2 tsp. vanilla extract 
2 c. all purpose flour 
2 tsp. cornstarch 
1 tsp. baking soda 
1/2 tsp. salt  *I like more salt in my cookies so I added a full tsp.
1 c. bittersweet chocolate chips *I like less chips in mine so I added about 3/4 cup.

Directions:
1.  Preheat oven to 350 degrees F.

2.  In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.

3.  Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.

4.  Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)

5.  Let cool, on the sheet, on a wire rack for five minutes.  Remove from baking sheet and let cool completely. 

*For me, it made 2 dozen.  And that doesn't include the 4 that I ate after dinner... 

Whaaaaat?  The baby in my belly said he needs them ;)

For the second batch I remembered that I like oatmeal in my cookies, so I added oatmeal.  I also love to add craisins.  And coconut, white chocolate chips, coconut, pecans--but I was out of those. 
Delish! And the secret ingredient?  Corn starch?!  It supposedly makes the cookies have more fluff.  I love anything with more fluff to it.  Now to help myself to a tall glass of ice cold milk.
Ahhhh.

For dinner (pre-cookies, of course) I was in a time crunch to get something in mine and Mosey's belly before it got too late.  I'm not a huge fan of spaghetti but this is a fun spin off that only has 4 easy ingredients.  4!!  
Super fast and Mosey LOVED it. 
 
Boil up some penne pasta (1.),  dump the pasta water and add spaghetti sauce (2.).   Eyeball in some whole milk (3.) to make it creamy(you can also use half and half, or heavy cream-whole was all I had on hand).  Sprinkle in some oregano, basil, garlic powder-or any other spices you wish, then CHEESE(4.) it up.  
You can cut up chunks of mozarella in the bake and add shredded parmesan on top, but what I did was cut up three string cheeses (again, all I had) and mixed it in with the noodles and sauce, then sprinkled a bag of Italian shredded cheese on top.  
Pop it in at 350 for about 25 mins, add some crusty french bread and whooo-la!
*I broiled the top for a few minutes to get a nice browned cheese on top for a nice cheesy layer.  

For a healthier option use wheat pasta-which I love and normally would put in, but I have failed to trick the hubby into eating wheat pasta in the past and it does not fly with him.  :( hmm.   Also it would be just AWESOME with fresh basil.  Nothing beats fresh basil in your dish.  I have unfortunately let my plant go.  It is no longer with us.  Poor thing...    
For some protein, add chicken, beef, or shrimp.  Sounds simply delightful!  Yeah?!

For your Sunday enjoyment...

Meet:

A hole in YUM...

a chocolate chunk muffin, sliced in half with the hole scooped in the bottom.  A cool and creamy {Tillimook Udderly Chocolate} ice cream fills the center with the muffin top placed back on.  Frozen for a few hours then eaten within minutes.
Great as a frozen treat or treat yourself to a more delectable, savory bite with a warm fudge sauce drizzled over top with whipped cream...and a cherry on top.

Chicken Pot Pie in a Pan

One of my favorite things about this time of year is food.  I make the excuse that the colder it is outside the more I need to eat to keep myself warm.  With that probably not being the case I have an adaptation to the wonderful recipe:  chicken pot pie {in a pan}.

Now, I'm completely going off memory.  I went back to find the recipe I used and it is no where to be found.  Seriously?!  But really, I've only made this once and it was so good I'm not about to forget it.  {and if it doesn't turn out you can totally yell at me}

Preheat oven to 425.

Filing:
Shredded chicken.
-Ideally you would have your chicken roasting in a crock pot for 8 hours with chicken stock, thyme, pepper, salt.  But if you're short on time, I broiled my with the above ingredients for about 20-30 mins then shredded.
Cream of chicken soup
Carrots
Celery
-You can also add potatoes, peas, corn-whatever you'd like.

Mix the shredded chicken with a can of cream of chicken soup mixing in lightly steamed vegetables (I like mine crunchy).


Pie Crust:
I know a lot of recipes call for a pie crust in a tube.  I have nothing again pie crusts in a tube because I know how cumbersome it can be to make them.  Believe, I've tried and failed many a times, but this is a fool-safe homemade recipe that will be worth the extra mess.

2 cups flour
1 tsp salt
1 tsp sugar
1 tsp baking powder
7 tbsp cold butter.
3/4 cup milk
Greased 8x8 pan

Mix the flour, salt and baking powder together along with 2 tbsp of butter.  Once you have it mixed together work in the remaining 5 tbsp of butter pinching them down to pea size as you mix in with the flour mixture.

Once your dough has been worked though with the butter, pour 3/4 cup of milk a little at a time and work through the mixture.

Place dough on a floured surface and roll out to about a 1/2" to 1/4" thick.  

I then measured (roughly) what my 8x8 pan was and cut it to fit the bottom of my pan.  Place dough at bottom of the pan.   Hang on to the extra dough.

Place the chicken mixture on top of the dough at the bottom of your 8x8 pan. 

With the extra dough, roll out, again to 1/2" to 1/4" and slice into about 1" strips.

Place {magnificently} over the chicken mixture in a crisscross pattern.

Bake in the oven for 20 minutes or until top is golden brown.
About 6-8 servings. 

{If you have any extra dough...
For dessert place remaining dough strips on a small cookie sheet and sprinkle with cinnamon and sugar.  Bake at 350 for about 10 minutes or until golden brown.}

Sorry I don't have pictures, but I plan on making it again soon and if so I will take pictures next time.  My last batch lasted literally seconds.  It was soooo yum.


It's such a simple meal that doesn't take very long, but once it's in your mouth it's like you've slaved all day over a hot stove.  Mmmm.  Nothing like  chicken pot pie in a pan to warm your tummy on a chilly fall day.

A Toasty Bread Pudding Recipe


Nothing like a warm cinnamon-y treat to cozy up to a generous helping of vanilla ice cream.  I asked my sweet hubby bunny to buy me some croissants.  And...
I got two dozen. 
 So if any of you have some killer croissant recipes, please PLEASE email me so they don't go bad. I would hate to waste the flakey, buttery goodness that they offer.
But the reason for the rather large purchase in the first place was a recipe that I found for bread pudding.  Yum.  And it is {trulie} YUM.

Here's the recipe.  And the explanation of the sliced thumb and sugar burn.

Epi's Bread Pudding:

(I really wish I had taken more pictures, but there was much going on at the time.  Enough said.)

What you will need:
12 large croissants, diced
1 tbsp cinnamon
7 large eggs
1 quart half-and-half
1 tbsp vanilla
2 cups sugar
2 Granny Smith apples, peeled, cored and diced

{**I halved this and used a 9x9 pan, and it was plenty}

What you DO:
Dice your croissants in to buttery little chunks into a large bowl.
DON'T dice your finger.  My Spunky had just sharpened our knife and it was killer sharp and it got me.  Good.
Add cinnamon to your diced bread and toss together.

In a separate bowl, mix eggs, half-and-half, vanilla, and sugar.  Beat well.

Pour egg mixture over croissants and stir to moisten all the pieces.  Let it stand for 30 minutes, then stir again.

Dice apples and add to the mixture and mix all together.

Oil a 9x13" pan.

Fill with the bread mix and pat down firmly.

Sprinkle with more cinnamon {not MORE cinnamon, as in use the wrong side of the containers' spout and DUMP the cinnamon.  Definitely should NOT do.}

Bake for 30 minutes at 325 degrees.

While your scrumptious toasty bread pudding dish is baking...
you can whip up a batch of Caramel Sauce.

This was my absolute first time and it was a HUGE SUCCESS! I was so happy to learn that I do have some of my grandmother's candy-making genes after all. {*big smile*}

What you will need:
1 cup of sugar
6 tbsp butter
1/2 cup heavy whipping cream

Per my instructions, it tells me to grab ALL three ingredients before you begin.  Why?  Because it is a fast and furious few minutes and it gets kind of intense if you have to leave the stove to grab something.  Believe me, you turn your head for one second and before you know it, you're flinging boiling freaking hot sugar at your finger and it instantly blisters and makes you curse a little.

Ahem.. 
As the directions say, and I quote:
"Safety first-make sure there are no children under foot and you mat want to wear oven mitts; the caramelized sugar will be much hotter than boiling water."

I apparently did not heed.  But really, don't let my experience scare you out of making this, because it is SO delicious.

What you DO:
Heat sugar on moderately high head in a heavy bottomed 2 or 3 quart saucepan.  As the sugar begins to melt, stir like mad with a whisk or wooden spoon.
 As soon as the sugar comes to a boil, stop stirring.
*Note: If you don't have a heavy bottom pan, add a 1/2 cup water to the sugar before you start melting to help the sugar cook more evenly.  It will take a little longer since you have to let the water evaporate, before the sugar can caramelize, but it will be worth it :)

As soon as all the sugar crystals have melted, it should be a dark amber color;
 like so.

Immediately add the butter to the pan.  Whisk until it has melted.

Once the butter has melted, take the pan off the heat.  Count to three, then slowly add the cream to the pan and continue to whisk.  The mixture will foam up once you add the butter and the cream, hence why we're using a 2-3 quart saucepan.

Whisk until caramel is smooth.

Let it cool in the pan for a couple minutes, then pour in a glass mason jar and let it sit to cool to room temperature.

Store in the fridge for up to 2 weeks.

Warm before serving and dripping on your delectable bread pudding like so:
Enjoy with a glass of milk, vanilla ice cream, or whipped cream.

Tute Sweet Tuesday

Do you know what I love most about people who have gardens?  Reaping the rewards :) 
Baha! I know, so lazy of me, right?
I have a garden {that I started two months too late :} But it is soooo not even ready to harvest.  But my super Mother-in-Law let me have some of her garden freshy veggies that looked de-VINE! 

Now, my Spunky is a little picky about his veggies which meant I would be eating these on my own, and knowing how well I go through veggies... {even though little E will help with her ice cube baby food } I still might not go through them fast enough.

I saw as I was going through my Betty Crocker Cook Book yesterday afternoon, figuring out the dreaded "What's for dinner?" question and found a page on how to make your own pizza dough and thought...mmm a FRESH! veggie garden pizza.  

Sounds a little {trulie} scrumptious, no?
Here's what I did!
To make the dough you will need:
1/2 cup of warm water (105-115 degrees)
a packet of yeast (2-1/4 tsp)
Dissolve yeast.

Then add about 3/4 of flour 
1 tsp e.v.o.o. (extra virgin olive oil)
1/2 tsp salt
1/2 sugar
{Sad I know that from memory... I made two extra doughs that I put in my freezer the next time I'm jonesing for some PiZZA :}

Mix all together and place on a lightly floured surface.  Knead for 10 mins adding about 1/2 cup or so more flour as you go.  You want the dough to be smooth and springy.  Place in a warm area and cover for 20 mins.  After 20 mins punch down the air and place in the fridge-covered for 2 hours, but no more than 48 hours.  

After waiting patiently for your bread to rise, heat oven to 425 and chop up some veggies.  I smoothed my dough with a rolling pin and put it on a round pizza pan, making the sides thicker than the middle.  Lather the dough with a drizzle of e.v.o.o., or use your favorite pizza sauce, cover the bottom with mozzarella or Italian cheese.  Place your veggies perfectly on pizza.  I used tomatoes, yellow and green squash.  Drizzle some more evoo and sprinkle with even more cheese, fresh basil, salt, pepper and oregano.  I dashed a tad of cayanne pepper and it gave it a nice bearable heat to it. 
MMMMMmmmmm.
Bake for 15-20 minutes or until the crust is golden brown.  

Pop out of oven and enjoy with a nice garden salad and {Cafe Rio} tomatillo ranch sauce with sunflower seeds.
 Delish, no?!

Sick Boy

I have a sick husband this week, so what does that call for?? 
Homemade Chicken Noodle Soup!
I thought this was HILARIOUS, so I just have to share.... 
So my husband came home from work early on Tuesday night because he was not feeling well. I went to the cupboards in pursuit of making my soup and  I realized I was all out of Chicken bullion cubes and my Celery was gone! I told him I'd run to Walmart real quick to grab some stuff and he told me not to worry about it. So I cooked something else for him. 
 On Wednesday he stayed home from work because he was still really sick. (here comes the funny part) I come home for my lunch break and I asked him what he wants for lunch. 
Hubby: I don't care babe, I'll have anything
So as I'm looking through the fridge I see sitting right on the top shelf, Celery and Chicken Bouillon cubes.
 My husband had made a Walmart run that morning for those two little ingredients. I just laughed to myself..
Me: Did you want me to make your chicken noodle soup now?
Hubby: I don't care babe. (all nonchalant like he hadn't just ran clear to Walmart JUST for chicken bouillon cubes and celery)
Boys....good thing we love em right??
So me being the great wife I am, whipped him up a quick batch of Homemade Chicken soup. (It only takes about 10-15 minutes)
So for all your sicky's out there, I'm sharing my recipe with you all!
Alright... I sort of just DUMP a bunch of stuff into a pot until it tastes the way I want it, so here's my recipe, give or take ;)

Homemade Chicken Noodle Soup
*Cooked Chicken (I used the canned chicken yesterday because I was in a hurry and it tastes just as great as boiled chicken, so use whatever is easiest for you)
*Pot full of boiling water
*I add about 5-6 chicken bouillon cubes because I love mine EXTRA tasty
*Chop up some Celery and Carrots (I like lots of celery in mine so I do about 2-3 stalks of celery and about 6 baby carrots) then combine it all into your boiling pot of agua.
*SPICE IT UP!! I use: Salt, Pepper, Garlic Salt, Onion Salt, a pinch of Dill weed, and a pinch of celery Salt. And don't forget a sprinkle of Parsley Flakes
*Last but not least, I use Giant Egg Noodles, drop them on in, pop on the lid and let them cook!
(sometimes I add about 2 tablespoons of cornstarch to thicken it up)
And there ya have it!!
(This is not my soup, I forgot to take a picture, but mine looks WAY better ;)

So, like I said....I pretty much just dump everything into my giant pot and taste test until I approve! This recipe is SO easy and it's a total NO FAIL! No matter what you add, stir, chop, and boil it will taste great! So if your not feeling to swell, whip up a batch of this Fabulous soup and you'll be feeling great in no time ;)

TST:Chicken di Pana

Hello all!
It's seems like I haven't written forever!! Thank you to my sister Roz to pick up my slack-a-lackin' booty! So the other day I was sitting at work thinking about lunch-because really I'm all about food 24/7.  Burritos? Eh.  A sandwich?  Maybe a dang kesa-dilla?
Hm.
What really sparkled my fancy was CHEESECAKE FACTORY. 
{Cue in Angels:} Ahhhhhhhhh!
Mmmmmmm.
Food.  Glorious.  Food.
My favorite, ok one of my favorite dishes there is their Chicken di Pana.  Can you say DE-VINE?!  But I will admit, it is a little er, caloric?  So not wanting to spend that kind of dough for dripping oily goodness, I raced home to scour through my cabinets to see what ingredients I could find.  
I had everything I needed.  Can I get a BOO YA?!
I looked online and I didn't see a specific recipe geared towards my beloved dish, so I kinda made it up :)
I started with two or three spuds.  Chopped them into some cubes and left them to boil.  The Factory makes their mashed potatoes with red, I just made mine with good ol' Idaho taters, cuz that's what I had.
I took 3 nice big chicken breasts and put them in a Ziplock and pounded away until they were about 1/4 of an inch thin. Dipped them in buttermilk and then in bread crumbs. Spread some EVOO on a baking dish and set my oven for 350.  
{I ended up cranking up to 375 and then 400 later on cuz it was taking F-O-R-E-V-E-R.   I might have been a little anxious to eat it :} 
Approx. 30 mins should do her.
THEN: I whipped up a White Wine Butter Sauce.  
3 shallots, finely minced
1/4 cup white wine vinegar or muscatel wine {I used a white wine}
4 tablespoons butter
Pinch of salt (to taste)
1/2 teaspoon freshly chopped parsley
In a small saucepan, boil down shallots in vinegar or muscatel wine. Continue cooking over low heat stirring occasionally 15 minutes.
Allow to cool. Stir in parsley.
Whisk in some room temperature butter, stirring over low heat. Add salt, vinegar or muscatel.
Simmer five minutes.
Yum.  
{And yes, I do have wine in the house...just in case I'm having a bad day... bahah juuuust kiddin. 
It's to cook with only!
Call me a Jack, but it the key is to reduce!  And in return you get a really great flavor and no hangover in the morning. Promise. :}
While I'm cooking up the sauce, I checked my chicken, waiting {patiently} for it to become a beautiful golden brown and began cutting up some trees {a.k.a broccoli}.  And into a boiling saucepan they go!  Once my broccoli still has a nice bite to them I drain out the water and stick about a tbsp of butter then salt and pepper them and leave them on my warming burner.  
Drain your taters and dash them with whole milk, s&p and start mashing away.  I also added some garlic power and some cayenne pepper to give it a little heat. 
Drizzle your sauce on the bottom of your plate, then layer it with your creamy, fluffy, starchy-goodness taters, dark ,rustically, green broccoli and goldeny, brown chicken.
{Stomach growling for food yet?}
And Volia!
Betchya can't tell whose is who?  
Ok, ok.  Mine's the one on the bottom.  It looks totally professional, no? :}
Mmmmm. Now I'm hungry.

How to HOMEMADE YOGURT

First off- thank you to our guest blogger for today, Jenna!
(our guest bloggers are awesome, yeah?!) 
I've know her since Mr. What's-His-Name's class for math in Jr. High.   I'm pretty sure I failed that class, (dang you MATH!) but we had a pretty great time writing notes and talking-tee-hee-hee!
I saw her post on FB and immediately knew I HAD to have her share her healthy yogurt makin' talent with you all!  
And for Healthy Food Week? PERFECT!

Oh boy, Where to begin?
Ashlie had recently contacted me because she had read my facebook status about me making homemade yogurt. Why was I attempting such a thing? Well, there is few things I actually excel in in life. In fact for the most part I am horrible at way too many things. For example, I have tried over and over the be a pet owner and after a few miserable and traumatic failed attempts I began to realize that just wasn't for me. (Let just say if we have our pets in Heaven I'll have a 1000 fish a few dogs and even a crab that I just flushed down the toilet) But for all the millions of things I am horrible at in life I have a few good things I excel in, one being eating healthy. I grew up in a home where every meal was made from scratch and for the most part they were relatively pretty healthy. I learned my basic habits there, but I didn't put them into play until I had children. I had once read a study on cancer and it had said that 70% of cancer cases are due to you're diet! 70% People!!! This is huge! (Whether this is true or not, it lit the fire under my butt!)
Ok, back to the yogurt...I have a son who LOVES, LOVES, LOVES, yogurt and would eat it for Breakfast, brunch, snack, lunch, Snack, Linner, Dinner, Midnight snack...You get the point, he would base a diet around yogurt. However, it is a rare occurrence when we have yogurt in our house for two reasons:
1. It's doesn't fit in to my grocery budget. (It's way over priced if you ask me!)
2. It truly is unhealthy for you (GASP) I know "they" say it's healthy! Who really is "they" anyway?
If we understood what was contained in that tiny packaged container we would throw it all away. But because I'm the loving mom who can't stand to let her little boy down I figured I'd find another alternative for his yogurt fetish.
Oh and did I mention it's SUPER EASY and SUPER CHEAP? Well it is!
Ok here we go...You don't even need to write
this down, YEP it's that Easy!
Ingredients you will need: (you may have seen other varieties, but this is the way I like it)

--8 cups (half-gallon) of whole milk--pasteurized and homogenized
is fine, but do NOT use ultra-pasteurized. (The fattier the milk the thicker the yogurt will be. I use 2% for the kids and Husband, I use skim for me!)
--1/2 cup store-bought natural, live/active culture plain yogurt (you need to have a starter. Once you have made your own, you can use that as a starter) I actually have used vanilla and it works just great.
--frozen/fresh fruit for flavoring
--thick bath towel
The Directions.

This takes a while. Make your yogurt on a weekend day when you are home to monitor.
Plug in your crockpot and turn to low. Add and add the
entire half gallon of milk. Cover and cook on low for 2 1/2 hours.
Unplug your crockpot. Leave the cover on, and let it sit for 3 hours.
When 3 hours have passed, scoop out 2 cups of the warmish milk and put it in a bowl. Whisk in 1/2 cup of store-bought live/active culture yogurt. Then dump the bowl contents back into the crockpot. Stir to combine.
Put the lid back on your crockpot. Keep it unplugged, and wrap a heavy bath towel all the way around the crock for insulation.

Go to bed, or let it sit for 8 hours.

In the morning, the yogurt will have thicken
ed---it's not as thick as store-bought yogurt, but has the consistency of low-fat plain yogurt.

Chill in a plastic container(s) in the refrigerator. Your fresh yogurt will last 7-10 days. Save 1/2 cup as a starter to make a new batch.

Now here is the part that gets tricky and you can use your own judgment on what you care to do. You will want to add some sort of sweetener. I just add fruit and it's is sweet enough for our family. (I don't add sugar to anything, so my kids are use to that)
In my opinion adding Honey would be good or liquid stevia. But please, pretty pretty pretty please don't add sugar or splenda:)

My favorite thing to do with the yogurt is make a smoothy! I love cream based smoothies. I add a little yogurt, a little fruit oh heck and a little spinach and you've got a great healthy smoothy! (my kids love it too AND they know there is spinach in there! Wahoo)

I hope you enjoy this as much as I do! I was shaking with excitement when I made this, it may be the topic of conversation for me for the next month or so!

Breakfast On-The-Go!

I am not a morning person. {yawn}
I dislike having to get up early at all and go to work/school.
I also have been eating breakfast in my car for the last 7 *eek* almost 8 years. 


You hear that breakfast is the most important meal of the day, but it's often the most neglected. So instead of filling up your coffee hot chocolate mug full of Marshmallow Mateys or Cocoa Puffs, and hitting the road, we're gonna learn some recipes on how to be healthy- 
On The Go...

First we have a Fruit, Cheese and Walnut Cup. And it is just that:
 fruit (apples, grapes)
your favorite cheese
(That's a little mathematical humor for cubed-ha!)
and walnuts-not candied-we're trying to be healthy here!
A great snack attack that fits perfectly in your mug. 

Next: A PB Waffle.
Need: Peanut Butter and
{preferably} a whole wheat waffle. 
TIP:Here at my house we don't eat a ton of waffles and when we do it's a Saturday, but I will usually make extra and FREEZE them for later.  
Fact:*Rhonda {our mom} makes the best whole wheat waffles in the whole weerld!  And she always makes them when us kids come home. Yum-o!
Dress your waffle up with PB; adding dried fruit or nuts if you're feeling a little wild and Enjoy!

Banana Shakn' Berries
Nesicito: Un Banana
Berries of your choice: Blue, Marion, Rasp, Straw, ect.
Yougurt: A berry, lemón, or vanilla style
Leche or Milk- for all you non-spanish speaking peeps
A **beso (kiss) of honey.
Mix it all up in your blenda and make a splenda breakfast for you and your Glenda...
{Lucky for you if you really know a Glenda, I didn't know what else rhymed with splenda and blenda.}

**Please excuse all my spanish.  I'll feeling a little rusty since my two semesters at BSU.  I'm pretty much fluent, but I just didn't want to overwhelm you with my awesome spanish-ness...Don't be surprised if I slip a word aquí and there, I'm practicing to be a professional ;)

Mornings. Ugg.  Pizza. Yum!
Morning+Pizza = A great day ahead of you.
Have some old french bread? (not moldy-that'd be gross.  Just some left over from spaghetti night) 
Or some plain ol' crusty bread will do
Ricotta
Tomatoes
EVOO (as Rachel Ray terms it)
S&P
(salt and pepper)
Throw it all on a small cookie sheet WITH aluminum foil-for easy clean up
Broil.
  *I always forget I'm broiling and always burn my stuff.  So be sure to keep an eye on it.  It should only take a couple mins.
**You can also make this an afternooner snack-just add some spinach- yeah?!

Last one-phew!
I only picked this one as my favorite because it is and sounds so {trulie} DELISH!
Get this: a Cereal Parfait.
You will need: 
Cereal
Yogurt
Berries
The possibilities are endless.

No more boring ugg breakfast on your way to school/work or whenever!
I'm so happy! Now I can feel good about waking up a couple minutes earlier and making something good AND healthy!
