peeeta! as in greek chicken and veggies pita

ok.  i couldn't resist.

these pita pockets turned out SCRUMPTIOUS!!!!!  and this is the only picture i have since i scarfed it down in 0.3 seconds.

here's what i did.

made the pita pockets from here.  making the dough in the bread maker.  makes everyone's life better by doing so-me thinks.

while the pitas were cooking i cut up two chicken breasts into chunks with approx. 2 tbsp olive oil on med. heat in a large pan. seasoned with salt, pepper, allspice, oregano, parsley, garlic powder, and drizzled some lemon juice over top.  I just eye balled it.  whatever looked good :} i let the chicken sizzle for a bit then covered to retain moisture.  meanwhile i cut up a carrot, stalk of celery, 1/4 of a red and green pepper and dumped them in with the chicken.  i let them simmer without covering for a few minutes, then a few covered as to not make them super soft (i like my veggies crunchy).

after the pockets de pita were cool, i cut them in half, drizzled some homemade ranch in the bottom, as i was out of plain greek yogurt, placed the chicken and veggies next, some spinach, tomatoes, parmesan cheese and avocados on top.

...as i was out of sour cream-used just mayo. turned out just as good.
